Dr. Dai Cheng is a Lecturer of the college of Food Engineering and Biotechnology, Tianjin University of Science and Technology. Dr. Cheng completed Bachelor Degrees from Tianjin University of Science and Technology at 2009. Dr. Cheng received his doctoral degree from China Agricultural University at 2014. On the completion of his Ph.D, Dr. Cheng is employed by Tianjin University of Science & Technology as a professor. He published over 20 scientific papers, and served as a peer reviewers for 3 international journals, such as Food Chemistry.
Heavy metal (Cd, Al, Pb, As) pollution is widely distributed in the environment. It has been well known as a neurotoxicant, and important chemical contaminants in food. Heavy metal has been reported to alter the blood–brain barrier; as a result of which it can cause formation of ROS and result in nerve cell damage. With the increasing number of heavy metal exposed people, prevention and control of heavy metal biotoxicity by daily dietary adjustment has become extremely urgent. The mechanisms underlying heavy metal exposure are still controversial. The present study investigated the mechanism of biotoxicity after heavy metal exposure on rat and the potential protective effect of polyphenol extract against heavy metal -induced biotoxicity. Based on the mechanism of the antagonistic effects of CA on dietary Al, the expected results would provide theoretic evidence and reference for prevention and control of Al-induced hazard by daily dietary adjustment.
